Cake "Layer" vs. "Tier"
Layer: is a single section of cake- typically 1-2 inches tall
Tier: is multiple cake layers all the same size, stacked on top of each other, to create an entire section of cake. For example, a two-tier cake will have a minimum of 6-8 layers, and a minimum of 30 servings.
"Double Barrel Cake"
A double-barrel cake is when a cake tier is divided into multiple sections, to allow for easier cutting and greater structural support. I build all of my cakes (with the exception of the smallest 6" round) double barrel style. Under every two layers of cake, there will be a hidden cake board. This allows you to cut manageable slices, then remove the board and continue cutting the next section below. A single cake tier can be up to 12 inches tall, and cutting 12 inch tall slices can be extremely daunting, especially with a crowd of hungry cake lovers waiting for their slice haha! This process does require additional time and supplies for each cake; however, I pride myself in always supplying an extremely well-structured, sturdy cake, that you don't have to be nervous about cutting.
So, as you peruse the menu, please keep in mind a multi-tiered cake, no matter how many layers, will have hidden cake boards under every two layers- in addition to support dowels.
